Ingredients

  • 6 slices thick-cut white or sourdough bread
  • 3 tbsp butter, softened
  • 2 cups shredded cheddar cheese
  • 1 tbsp olive oil
  • 1/2 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 (15 oz) can tomato sauce
  • 1 cup heavy cream or half-and-half
  • 1/2 tsp dried basil
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 190°C (375°F). Grease a 9x9" baking dish.
  2. Butter the bread slices on one side. Cut into cubes.
  3. Spread half the cubes (butter-side up) in the dish and sprinkle with half the cheese.
  4. In a saucepan, heat olive oil over medium. Sauté onion and garlic until soft.
  5. Add tomato sauce, cream, basil, salt, and pepper. Simmer for 5 minutes.
  6. Pour half the soup mixture over the bread and cheese.
  7. Repeat layers with remaining bread, cheese, and soup mixture.
  8. Cover with foil and bake for 20 minutes. Uncover and bake 10 more minutes until bubbly and golden.
