Ingredients

  • 1 kg chicken
  • 2 cups basmati rice
  • 1 cup yogurt
  • 2 large onions, sliced
  • 1/2 cup cooking oil or ghee
  • 1/4 cup milk with a pinch of saffron
  • 2 tbsp ginger-garlic paste
  • 1 tbsp biryani masala
  • Salt to taste
  • Fresh coriander and mint leaves

Instructions

  1. Marinate chicken with yogurt, biryani masala, ginger-garlic paste, and salt. Let it rest for at least 2 hours.
  2. Fry onions in oil until golden brown. Reserve some for garnishing.
  3. Partially cook basmati rice with a pinch of salt. Drain and set aside.
  4. In a heavy-bottomed pot, layer the marinated chicken, followed by a layer of rice, fried onions, and saffron milk.
  5. Cover tightly and cook on low heat for 30-40 minutes until the chicken is tender and the rice is fully cooked.
  6. Garnish with fresh coriander, mint leaves, and reserved fried onions.
  7. Serve hot with raita or a side salad.
