Vegetable Upma Recipe | Easy & Healthy South Indian Breakfast
Vegetable Upma is a classic South Indian breakfast dish made with semolina (rava), fresh vegetables, and fragrant spices. It is nutritious, filling, and incredibly easy to prepare. This versatile recipe can be customized with your favorite veggies and is perfect for a quick morning meal or light dinner.
Ingredients
- 1 cup semolina (rava/sooji)
- 2 tablespoons oil or ghee
- 1 teaspoon mustard seeds
- 1 teaspoon urad dal (optional)
- 1 teaspoon chana dal (optional)
- 1-2 green chilies, finely chopped
- 1 medium onion, finely chopped
- 1-inch piece ginger, grated
- 1 cup mixed vegetables (carrots, peas, beans, etc.), finely chopped
- 2.5 cups water
- Salt to taste
- Fresh coriander leaves for garnish
- 1 tablespoon lemon juice (optional)
Instructions
- Dry roast the semolina in a pan on medium heat until it turns light golden and aromatic. Keep aside.
- Heat oil or ghee in a pan. Add mustard seeds and let them splutter.
- Add urad dal and chana dal. Fry until golden brown.
- Add green chilies, chopped onion, and grated ginger. Sauté until the onions become translucent.
- Add chopped vegetables and sauté for 2-3 minutes.
- Pour water and add salt. Bring to a boil.
- Slowly add the roasted semolina while continuously stirring to avoid lumps.
- Cook on low heat, stirring frequently until the water is absorbed and the upma reaches desired consistency.
- Turn off the heat. Add lemon juice and garnish with fresh coriander leaves.
- Serve hot with coconut chutney or pickle.

- You can add cashews or peanuts for added crunch.
- For a richer flavor, use ghee instead of oil.
- Adjust water quantity for softer or firmer upma.
