Chickpea Stir-Fry

Ingredients:

  • 1 cup cooked chickpeas
  • 1 tablespoon olive oil
  • 1 cup broccoli florets
  • 1 bell pepper, sliced
  • 1 carrot, julienned
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon chili flakes (optional)
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a large pan over medium heat.
  2. Add minced garlic and sauté until fragrant.
  3. Add broccoli, bell pepper, and carrot. Stir-fry for 5 minutes.
  4. Stir in the chickpeas and cook for another 5 minutes.
  5. Add soy sauce, sesame oil, chili flakes, salt, and pepper. Mix well.
  6. Cook for 2 more minutes and serve hot.
